Scarab is the joint venture of winemakers Vailia From of Desparada and Cameron Stoffel of Ultima Tulie.

In ancient Egypt, the scarab beetle symbolized the rising sun and life-giving renewal. Placed in each tomb, they escorted every person to the afterlife—the ultimate new beginning.

Over the years spent crafting wines from renowned Central Coast vineyards, they’ve been bound by a deep appreciation of sparkling wine. That appreciation eventually grew into a passion, then a full-fledged obsession—one that culminated in méthode champenoise bottles of their own. 

With Scarab, they’ve taken the sophistication and refined jubilance they love about vintage Champagne and rendered it with California dynamism. It’s a bold new chapter for two distinguished winemakers, an evolution in each of their vinous journeys.
